Coho Fillet Portions are typically 1/3 to 1/2 of a full fillet. Package sizes vary form about 8-oz to 20-oz each. 

All fillets contain the Pin Bones. Pin bones aren't removed through filleting. Many large Alaskan  processors remove them with a machine, but in order for the machine to work the salmon have to “rest” for  a few days so their flesh can soften. “Resting,” in reality, is an  industry euphemism for rotting. We leave the pin bones in! This way we can freeze the fillets the same day the fish are caught for the freshest possible fillets.

Coho Salmon Steaks are about 3/4" thick. Typically we package them (2) steaks per package. Packages weigh about 10-oz to 14-oz.

King Fillet Portion package sizes vary form about 6-oz to 16-oz each.

White King is still King Salmon........just WHITE! While both Red & White Kings look the same from the outside, the meat on the inside of about 30% of them is a mellow white in color. Some folks say they tast the same, others say the white is moister and milder!

Lingcod is a mild, flakey white meat considered some of the best ocean fare available by many. Packages range from 8-oz. to 16-oz. each.

Mild white flakey meat makes Rockfish a favorite for Fish Tacos! Packages contain (2) filets and weigh 10-oz. to 16-oz.
